Caramelized Onion Tart


Ingredients:
Pastry:
Plain Flour 普通面粉 - 90g
Wholemeal Flour 全麦面粉 - 90g
Butter (diced) 牛油 (切粒) - 90g
Egg Yolk 蛋黄 - 1 no.

Chilled water 冷水 - ~

      To make pastry, mix the plain flour and wholemeal flour. Use fingertips to rub in the butter until the mixture resembles fine breadcrumbs.  Mix in egg yolk and enough chilled water to form a firm dough. Rest the dough in fridge for 30 minutes

把普通面粉和全麦面粉混合。用手指慢慢搓进牛油成粒状。加入蛋黄和足够的冷水搓成团。静置在冰箱约30分钟。



1.      Preheat oven to 200C. Roll out the pastry and use to line the tin.  Trim, then chill for 20 minutes.
把烤箱预热至200度。把面团扞成片压进派盘里。静置20分钟。
2.      Prick the pastry base.  Bake blind for 10 minutes. Spoon in the onions.

在派皮上插上小洞,进炉烤约10分钟。出炉后放上洋葱。撒上芝士。

Filling:
Butter    牛油  - 15g
Cooking Oil 食油 - 15g
Onion (sliced) 洋葱 (切丝) - 500g
Portobello Mushroom 蘑菇 (切片) - 1 no
Fresh Thyme - to taste
Brown Sugar 黄糖 - 1 tsp
Cooking Cream  鲜奶油 - 150g
Cheddar Cheese Cheese 芝士 -   ~
Mozzarella Cheese 芝士 -   ~
Eggs 蛋 - 2 nos
Salt  - to taste

Black Pepper 黑胡椒 - to taste

1.      Meanwhile, make the filling.  Heat the butter and cooking oil in a frying pan.  Cook the onions over low heat for 15-20 minutes until soft and translucent, stirring often.  Add in fresh thyme, sugar and seasoning and cook for another 5 minutes or until onions have caramelized.  Cool slightly.
馅料:把牛油和食油在锅里加热。以中小火把洋葱煮约15-20分钟至软及透明。加入蘑菇片,香草,糖和其他调味料继续煮约5分钟。





1.      Beat the eggs with cream, season to taste.  Pour the mixture over the onions and bake for 30 minutes until set.  Serve warm.
把蛋和鲜奶油混合,以盐和胡椒粉调味。把蛋糊倒在洋葱上。以200度烤约30分钟至熟即可。趁热吃。
