Yam Croquette 芋角

皮料:
(A) Yam 芋头 (steamed and mashed 蒸熟压成泥) – 300g
      Salt – 适量
      Sugar – 适量
      Chinese Five Spice Powder 五香粉-适量
(B) Tang Flour 澄面粉 – 60g
      Boiling Water 沸水 – 100g
(C) Shortening 白油 - 45g

Method做法:

1. Add boiling water to tang flour, quickly stir to combine using 
    chopsticks. 把沸水加入澄面粉里用筷子迅速搅拌。

2.Steam & mash the yam.  Add the tang flour mixture (1) to 
    mashed yam, knead to combine.  Add in the remaining 
    ingredients eg. shortening, salt, sugar, five spice powder, Knead 
    to form a smooth dough, remove any lumps as you go.  Shape 
    the dough into ball, refrigerate for 30 minutes.
把芋头蒸熟后压成泥,加入澄面团(1)搓均匀。加入其余的材料如白油,盐,糖,五香粉,搓成一个光滑的团,搓的时候可随手把硬块拿走。把芋头团搓成圆形冷藏30分钟.

3. Divide the dough into 40g each, shape into small balls.
    把芋头团分割成40g一粒,搓成球状。

4. Flatten the ball, wrap in chilled fillings.  Pinch the dumpling 
    closed and mould it into oval shape.
      把芋团压扁,包入馅料,压紧封口,搓成椭圆形

5. Heat up enough oil into a wok. deep fry the dumplings until 
    golden brown. The netting should be form around the dumpling.
 放入芋角炸两分钟至金黄色。这时候应该有网一样的丝包围
 着芋角。

6. Serve immediately. 趁热享用。

Filling 馅料:

Eryngii Mushrooms 杏鲍菇 (diced 切粒) – 200g
Dried Mushroom 干香菇 – 4 朵,切粒
Green Peas 青豆 - 半碗

调味料:
Ginger 姜蓉 - 适量
Oil 食油 - 适量
Salt 适量
Five Spice Powder 五香粉 – 适量
Vegetarian Oyster Sauce 素蚝油 – 适量
Dark Soy Sauce 黑酱油- 适量
Burdock Powder 牛蒡纯粉 - 适量
Pepper 胡椒粉 – 适量
Sesame Oil 麻油 - 适量

*依自己喜欢的调味
